Baked Chilli Chicken
All cooked in a wok.
Chillies are roasted first - to highlight flavour use lots of chillies, remove seeds and roast well on a dry pan.
Stir-fry small strips of free range chicken breast in macadamia oil and sesame oil. Remove from wok.
Stir-fry sliced garlic, onions, beans and carrots (cut into sticks) and finely chopped roasted chillies.
Add oyster sauce, fish sauce, soy sauce, and coconut palm sugar or maple syrup (pre mixed with a little water) and stir through.
Add chicken, cashew nuts and lots of chopped corrianda.
Stir briefly to heat through and serve with basmati rice - yum!
